The Markou family is striving toward a sustainable business offering locally grown produce. George’s wife, Traci, runs a small permaculture based ranch and garden in the Tanque Verde Valley which supplies Greek Taverna fresh, seasonal vegetables such as tomatoes, eggplants, bell peppers, onions, zucchinis, cucumbers, etc., and herbs such as dill, garlic and basil all grown without chemical fertilizers or pesticides. The ranch’s goats provide milk which is used in many recipes at the restaurant and is made into traditional Greek cheeses such as haloumi or yogurt for tzatziki.
